Description

Enjoy a unique twist on classic white chocolate fudge with this Vanilla Bean Dandelion Fudge recipe, featuring the delicate floral notes of dandelion petals infused into rich vanilla and creamy white chocolate. Perfect for a spring dessert that’s both elegant and delicious.

Ingredients

Scale

Fudge Ingredients

  • 1/2 cup dandelion petals (washed and yellow parts only)
  • 1/2 cup heavy cream
  • 1/2 cup unsalted butter
  • 1/2 vanilla bean (seeds scraped) or 1 teaspoon vanilla bean paste
  • 2 cups white chocolate chips
  • 1 1/2 cups powdered sugar
  • Pinch of salt

Instructions

  1. Infuse Cream Mixture: In a small saucepan, combine the heavy cream, unsalted butter, dandelion petals, and the seeds from half a vanilla bean or vanilla bean paste. Heat gently over low to medium heat until the butter melts and the mixture starts to simmer. Let it steep for 5 minutes to allow the dandelion petals to impart their floral flavor.
  2. Strain Petals: Remove the saucepan from heat and strain the mixture through a fine mesh sieve to remove all dandelion petals. Return the warm infused cream and butter liquid to the pan.
  3. Melt White Chocolate: Add white chocolate chips to the warm liquid and stir continuously over low heat until the chocolate melts completely and the mixture is smooth and velvety.
  4. Add Sugar and Salt: Take the pan off the heat and stir in the powdered sugar and a pinch of salt until fully incorporated and the fudge mixture thickens slightly.
  5. Set the Fudge: Pour the mixture into a parchment-lined 8×8-inch baking dish, smoothing the top with a spatula for an even surface. Refrigerate for at least 2 hours or until firm.
  6. Serve: Once set, cut the fudge into 16 squares and serve chilled for the best texture and flavor experience.

Notes

  • Use only dandelions that are chemical-free and harvested from a clean area to ensure safety and flavor.
  • For a more intense floral taste, steep the dandelion petals in the cream mixture for longer than 5 minutes if desired.
  • Store the fudge in an airtight container in the refrigerator for up to 1 week to maintain freshness.
