Main Ingredients
- 2 cups canned butter beans, drained and rinsed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups spinach, chopped
- 1/4 teaspoon red pepper flakes (optional)

- Sauté garlic: Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant and slightly golden.
- Add sun-dried tomatoes and spice: Stir in the chopped sun-dried tomatoes and red pepper flakes, cooking for 2 minutes to release their flavors.
- Combine butter beans and spinach: Add the drained butter beans and chopped spinach to the skillet and cook for about 5 minutes, stirring occasionally, until the spinach wilts and the beans are heated through.
- Season and serve: Season with salt and pepper according to taste, then serve warm for a comforting and nutritious dish.
Notes
- If using dry sun-dried tomatoes, soak them in warm water for 10 minutes before chopping.
- For an extra protein boost, add cooked Italian sausage or grilled chicken.
- To make it vegan, ensure the sun-dried tomatoes are oil-packed in olive oil and no animal products are added.
- Serve with crusty bread or over cooked pasta for a heartier meal.
- Adjust red pepper flakes to control heat level or omit for a milder flavor.
