Mini Pancakes:

- 1 pound ground beef (80/20)

- 12 mini pancake buns (from batter)

Instructions
- Make the Mini Pancakes: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the buttermilk, egg, and melted butter together. Combine the wet and dry ingredients until just mixed, taking care not to overmix for tender pancakes. Heat a nonstick skillet over medium heat and spoon 1–2 tablespoons of batter per pancake. Cook each mini pancake for 1–2 minutes per side until golden brown. Repeat until about 24 mini pancakes are made. Set pancakes aside.
- Cook the Sliders: Form the ground beef into 12 small patties, slightly larger than the pancake size to fit well as burger patties. Season each patty with salt and pepper. Heat a skillet or griddle over medium-high heat and cook patties for 2–3 minutes per side, ensuring they are cooked through. During the last minute of cooking, place a quarter slice of cheese on each patty to melt.
- Assemble Sliders: Spread a small amount of truffle butter on the inside of each pancake bun. Place one pancake on a serving plate, top with a melted cheeseburger patty, and add any optional toppings such as shredded lettuce, pickles, or a dollop of truffle mayo. Top with a second pancake to complete each slider. Serve immediately for best flavor and texture.
