Description
Traditional Irish Colcannon is a comforting and hearty side dish made from creamy mashed potatoes blended with sautéed green cabbage and green onions, enriched with butter and cream. Perfectly seasoned and easy to prepare, this classic Irish recipe is a delicious way to enjoy comforting flavors with fresh vegetables.
Ingredients
Scale
Potatoes
- 2 pounds starchy potatoes (e.g., Russets)
Vegetables
- 4 cups finely chopped green cabbage
- 4 chopped green onions
Dairy & Fats
- 1/2 cup milk or heavy cream
- 4 tablespoons butter
Seasonings
- Salt and pepper to taste
Instructions
- Prepare Potatoes: Peel and chop the potatoes into even chunks to ensure they cook uniformly. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, approximately 15-20 minutes.
- Sauté Cabbage: While the potatoes boil, melt butter in a skillet over medium heat. Add the finely chopped green cabbage along with salt and pepper, then sauté until wilted and tender, for about 5-7 minutes.
- Add Green Onions: Stir in the chopped green onions to the skillet with cabbage and cook them together for an additional 2 minutes to soften and marry the flavors.
- Mash Potatoes: Drain the cooked potatoes and return them to the pot. Add milk or heavy cream and butter, and mash the mixture until smooth and creamy.
- Combine Ingredients: Fold the sautéed cabbage and green onion mixture into the mashed potatoes until evenly incorporated. Adjust seasoning with salt and pepper to taste.
- Serve: Serve the Colcannon hot, optionally topped with an extra pat of butter for richness and added flavor.
Notes
- Use Russet or other starchy potatoes for the best fluffy texture.
- Heavy cream will result in a richer dish, while milk keeps it lighter.
- The dish can be customized by adding cooked bacon or ham for a non-vegetarian version.
- Colcannon is traditionally served as a side dish to meats or fish but can also be enjoyed on its own.
- Leftovers can be reheated gently on the stovetop or microwave, adding a little milk if needed to maintain creaminess.
