Tofu Skin Rolls
- 6–8 sheets dried tofu skin (yuba)
- 1 cup shredded carrots
- 1 cup thinly sliced shiitake mushrooms
- 1 cup mung bean sprouts
- ½ cup bamboo shoots (julienned)
- 2 green onions (thinly sliced)
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water (for sealing)
- Vegetable oil for frying or steaming
Instructions
- Soften Tofu Skin: Soak the dried tofu skin sheets in warm water for about 20–30 minutes until they become soft and pliable. Carefully pat them dry with a clean towel to prepare for filling.
- Prepare Filling: In a pan, heat a small amount of vegetable oil and sauté the shiitake mushrooms, shredded carrots, bamboo shoots, and mung bean sprouts for 3–4 minutes until just tender. Add soy sauce, hoisin sauce, and sesame oil; stir to combine and cook for another 1–2 minutes. Remove from heat and let the mixture cool slightly.
- Assemble Rolls: Lay one softened tofu skin sheet on a flat surface. Place a few spoonfuls of the vegetable filling near one end of the sheet. Fold in the sides and roll it up tightly like a spring roll. Seal the edge with the cornstarch slurry to secure the roll. Repeat with the remaining tofu skin sheets and filling.
- Cook Rolls by Steaming: Place the assembled rolls in a steamer basket lined with parchment paper or cabbage leaves. Steam over medium heat for 10–12 minutes until the rolls are heated through and tender.
- Alternatively, Pan-Fry Rolls: Heat a little vegetable oil in a nonstick skillet over medium heat. Add the tofu skin rolls and cook until all sides are golden brown and crispy, about 3–5 minutes per side, carefully turning to ensure even cooking.
- Serve: Slice the rolls and serve warm with soy sauce, chili sauce, or black vinegar as dipping options for enhanced flavor.
