- Prepare the Filling: In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the finely diced strawberries to create a creamy, fruity filling.
- Prepare the Bread: Flatten each slice of bread using a rolling pin to create an even surface for rolling. Spread a thin layer of the strawberry cream cheese mixture over one side of each slice of bread.
- Form the Roll-Ups: Roll the bread slices up tightly, starting from one edge, to encase the filling, and set them aside seam-side down to hold their shape.
- Make the Egg Batter: In a shallow bowl, whisk together the eggs, milk, ground cinnamon, and granulated sugar until well combined and smooth.
- Cook the Roll-Ups: Heat the unsalted butter in a large skillet over medium heat until melted and hot. Dip each roll-up into the egg mixture, turning to coat all sides thoroughly. Place the coated roll-ups seam-side down in the skillet and cook, turning occasionally, for 2 to 3 minutes per side, or until all sides are golden brown and cooked through.
- Serve: Remove the roll-ups from the skillet and serve warm. Optionally, dust with powdered sugar or drizzle with maple syrup for added sweetness.
Notes
- Use very finely diced strawberries to prevent tearing the bread when spreading the filling.
