Description

Strawberry French Toast Roll-Ups are a delightful twist on traditional French toast. Soft slices of white or brioche bread are filled with a creamy, sweetened strawberry cream cheese mixture, rolled up, then dipped in a cinnamon-spiced egg batter and cooked on the stovetop until golden brown. This fun and delicious breakfast treat is perfect for a special morning or a sweet start to your day.

Ingredients

Scale

For the Strawberry Cream Cheese Filling

  • 8 slices white or brioche bread, crusts removed
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, finely diced

For the Batter and Cooking

  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, for cooking

For Serving (Optional)

  • Powdered sugar or maple syrup

Instructions

  1. Prepare the Filling: In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the finely diced strawberries to create a creamy, fruity filling.
  2. Prepare the Bread: Flatten each slice of bread using a rolling pin to create an even surface for rolling. Spread a thin layer of the strawberry cream cheese mixture over one side of each slice of bread.
  3. Form the Roll-Ups: Roll the bread slices up tightly, starting from one edge, to encase the filling, and set them aside seam-side down to hold their shape.
  4. Make the Egg Batter: In a shallow bowl, whisk together the eggs, milk, ground cinnamon, and granulated sugar until well combined and smooth.
  5. Cook the Roll-Ups: Heat the unsalted butter in a large skillet over medium heat until melted and hot. Dip each roll-up into the egg mixture, turning to coat all sides thoroughly. Place the coated roll-ups seam-side down in the skillet and cook, turning occasionally, for 2 to 3 minutes per side, or until all sides are golden brown and cooked through.
  6. Serve: Remove the roll-ups from the skillet and serve warm. Optionally, dust with powdered sugar or drizzle with maple syrup for added sweetness.

Notes

  • Use very finely diced strawberries to prevent tearing the bread when spreading the filling.
  • These roll-ups are best served fresh but can be kept warm in a low oven (about 200°F or 93°C) for up to 20 minutes without losing their texture.
  • Ensure the skillet is not too hot to prevent burning the roll-ups before they are cooked through.
  • Brioche bread works especially well for a richer, softer texture, but white bread is also perfect.
