Description

This easy and delicious strawberry freezer jam uses fresh, ripe strawberries combined with sugar and powdered fruit pectin to create a sweet, spreadable jam without cooking. Perfect for quick preservation, it sets after 24 hours at room temperature and can be stored in the freezer for up to one year or refrigerated for up to three weeks.

Ingredients

Scale

Strawberry Freezer Jam Ingredients

  • 2 cups crushed fresh strawberries (about 1½ lbs whole)
  • 4 cups granulated sugar
  • 1 (1.75 oz) package powdered fruit pectin (such as Sure-Jell)
  • ¾ cup water

Instructions

  1. Prepare Strawberries: Wash, hull, and crush the strawberries using a potato masher or fork until you have 2 cups of crushed fruit. Leave some chunks for texture if desired.
  2. Mix with Sugar: In a large bowl, combine the crushed strawberries and granulated sugar. Stir well and let the mixture sit for 10 minutes, occasionally stirring to help dissolve the sugar.
  3. Cook Pectin Mixture: In a small saucepan, whisk together the powdered fruit pectin and water. Bring the mixture to a boil over high heat, stirring constantly, and allow it to boil for 1 minute before removing from heat.
  4. Combine Pectin with Strawberry Mixture: Quickly pour the hot pectin mixture into the strawberry and sugar mixture. Stir constantly for 3 minutes until the sugar is mostly dissolved and the mixture becomes glossy.
  5. Transfer to Containers: Pour the jam into clean, freezer-safe containers, leaving about ½ inch of headspace for expansion during freezing. Secure with tight-fitting lids.
  6. Set and Store: Let the jam stand at room temperature for 24 hours to fully set. After setting, store in the freezer for up to 1 year or refrigerate for up to 3 weeks.

Notes

  • Use fully ripe, fresh strawberries for the best flavor and consistency.
  • Do not reduce the sugar or substitute with sugar alternatives unless using a pectin designed for low-sugar recipes.
  • Ensure containers are freezer-safe and clean to prevent spoilage.
  • Allow the jam to set fully at room temperature before refrigerating or freezing for optimal texture.
