Description

These Spinach & Feta Pastry Rolls are a delicious and easy savory puff pastry recipe perfect for appetizers or snacks. Featuring a flavorful filling of sautéed spinach, tangy feta, and aromatic herbs wrapped in flaky golden puff pastry, these rolls are both elegant and simple to prepare in under an hour.

For the Filling

  • 300 g fresh spinach (or 200 g frozen, thawed and drained)
  • 200 g feta cheese, crumbled
  • 1 egg
  • 1 garlic clove, finely grated
  • ½ tsp dried oregano
  • Black pepper, to taste

For the Pastry

  • 1 sheet puff pastry (250–275 g), thawed if frozen
  • 1 egg yolk + 1 tbsp milk (for egg wash)
  • Optional: sesame seeds or nigella seeds for topping


Instructions

  1. Prepare the filling: Sauté the fresh spinach in a dry pan over medium heat until wilted. Allow to cool, then chop finely and mix with crumbled feta cheese, one whole egg, finely grated garlic, dried oregano, and black pepper to taste.
  2. Roll out the pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a large rectangle to ensure even layering.
  3. Assemble the rolls: Spread the spinach and feta filling evenly over half of the puff pastry rectangle. Fold the other half of the pastry sheet on top to cover the filling completely.
  4. Cut and shape: Using a sharp knife, cut the folded pastry into strips approximately 3 to 4 cm wide. Twist each strip or roll them into logs to create individual pastry rolls.
  5. Bake the rolls: Place the shaped rolls on a baking sheet lined with parchment paper. Brush the tops with a mixture of egg yolk and milk for a golden finish. Sprinkle with optional sesame or nigella seeds if desired. Bake in a preheated oven at 200°C (390°F) for 20 to 25 minutes, or until the pastry is puffed and golden brown. Serve warm or at room temperature.

Notes

  • Ensure spinach is well cooled and drained to prevent the pastry from becoming soggy.
  • Using frozen spinach? Thaw and squeeze out excess water before mixing.
  • Egg wash gives the pastry a beautiful glossy finish and golden color.
  • Seeds on top add a nice extra texture and flavor but are optional.
  • These rolls can be served hot or at room temperature, making them great for entertaining.
