  • 1 tablespoon sesame oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 1/2 pounds carrots, peeled and chopped
  • 4 cups vegetable broth
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1/2–1 teaspoon red chili flakes or chili paste (adjust to heat preference)
  • Salt and pepper to taste
  • Juice of 1/2 lime

Garnish

  • Coconut milk or plain yogurt
  • Chopped green onions or cilantro (optional)


Instructions

  1. Sauté aromatics: Heat sesame oil in a large pot over medium heat. Add chopped onion and sauté for 3–4 minutes until softened. Stir in garlic, ginger, and chili flakes or chili paste, cooking for another minute until fragrant.
  2. Add carrots: Add the peeled and chopped carrots to the pot and stir well to coat them with the aromatics and oil.
  3. Add broth and simmer: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20–25 minutes, or until the carrots are completely tender.
  4. Blend the soup: Remove the pot from heat and carefully blend the soup until smooth using an immersion blender or a countertop blender in batches.
  5. Season the soup: Stir in the white miso paste, soy sauce, and lime juice. Taste and adjust the seasoning with salt and pepper as needed. Avoid boiling the soup after adding miso to preserve its probiotics and flavor.
  6. Reheat gently and serve: If needed, gently reheat the soup on low heat. Serve hot, topped with a swirl of coconut milk or plain yogurt and a sprinkle of chopped green onions or cilantro for garnish.
