Ingredients
Scale
Pasta
- 8 oz linguine
Chicken
- 2 boneless, skinless chicken breasts
- 1-2 tbsp Cajun seasoning
- 1 tbsp olive oil
Vegetables
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
Sauce
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Garnish
- Fresh parsley, chopped
Instructions
- Cook pasta: Cook the linguine according to the package instructions until al dente. Drain well and set aside.
- Season chicken: Generously sprinkle the Cajun seasoning on both sides of the boneless, skinless chicken breasts to infuse them with spicy flavor.
- Cook chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side, until the chicken is cooked through and no longer pink inside. Remove from skillet and let rest before slicing to retain juices.
- Sauté vegetables: In the same skillet, add the sliced red and green bell peppers, onion, and minced garlic. Sauté for 4-5 minutes until the vegetables are tender and fragrant, absorbing the leftover flavors from the chicken.
- Make creamy sauce: Pour in the heavy cream and add the grated Parmesan cheese to the skillet. Stir constantly until the cheese melts and the sauce thickens to a creamy consistency.
- Toss pasta with sauce: Add the cooked linguine to the skillet and toss thoroughly to coat the pasta evenly with the creamy Cajun sauce.
- Add sliced chicken: Slice the rested chicken breasts into strips and add them back to the skillet. Toss again to combine all ingredients well.
- Garnish and serve: Serve the spicy creamy Cajun chicken pasta hot, garnished with freshly chopped parsley for a burst of color and fresh flavor.
Notes
- Adjust the amount of Cajun seasoning based on your preferred spice level.
- Use freshly grated Parmesan for the best melting and flavor.
- For a lighter version, substitute heavy cream with half-and-half or Greek yogurt, but be cautious as the sauce might be less thick.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
