Description

Slow Cooker Maple & Brown Sugar Glazed Carrots are tender baby carrots cooked to perfection in a sweet and warmly spiced glaze of maple syrup, brown sugar, cinnamon, and butter. This easy, hands-off recipe is perfect for a comforting side dish that brings out the natural sweetness of carrots with a rich, buttery finish, ideal for holiday meals or everyday dinners.

Ingredients

Scale

Carrots

  • 2 lbs baby carrots

Glaze

  • 1/4 cup unsalted butter, melted
  • 1/3 cup maple syrup
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Garnish

  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare the Slow Cooker: Lightly grease the bottom of the slow cooker to prevent sticking and ensure easy cleanup.
  2. Add Carrots: Place the 2 lbs of baby carrots evenly into the greased slow cooker.
  3. Make the Glaze: In a small bowl, combine the melted unsalted butter, maple syrup, brown sugar, cinnamon, and salt. Mix well until the sugar dissolves and the mixture is homogenous.
  4. Coat the Carrots: Pour the glaze over the carrots in the slow cooker and toss or stir gently to coat the carrots evenly with the sweet mixture.
  5. Cook: Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours until the carrots are tender and the glaze is bubbly and caramelized. Stir once or twice during cooking to redistribute the glaze.
  6. Serve: Transfer the glazed carrots to a serving dish, drizzle with any remaining glaze from the slow cooker, and garnish with chopped fresh parsley for color and added freshness if desired.

Notes

  • Use baby carrots for even cooking and a nice texture.
  • Adjust cooking time based on your slow cooker model; check tenderness accordingly.
  • The glaze can be made ahead and refrigerated; warm slightly before pouring over carrots.
  • Optional garnishing with fresh parsley adds a bright contrast to the sweetness.
  • For a bit of heat, consider adding a pinch of cayenne pepper to the glaze.
