Description

These Salted Sage Honey Butter Brioche Rolls are soft, fluffy, and rich with a hint of sweetness and herbaceous sage. Perfect as a warm, buttery accompaniment to any meal or for holiday dinners, these homemade rolls combine the delicate richness of brioche with a luscious honey butter topping sprinkled with flaky sea salt.

Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup warm milk
  • 1/4 cup warm water
  • 1/4 cup honey
  • 3 large eggs, room temperature
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon salt

Topping & Finishing

  • 1/4 cup unsalted butter, melted (for brushing)
  • 2 tablespoons honey (for topping)
  • 1 tablespoon fresh sage, finely chopped
  • Flaky sea salt (for finishing)

Instructions

  1. Activate the Yeast: In a small bowl, dissolve the active dry yeast in the warm water. Let it sit for about 5 minutes until it becomes foamy, indicating the yeast is active.
  2. Mix Dough Ingredients: In a large mixing bowl, combine warm milk, honey, eggs, softened butter, and salt. Stir in the yeast mixture until fully incorporated.
  3. Add Flour and Form Dough: Gradually add the all-purpose flour to the wet ingredients, mixing continuously until a soft dough forms.
  4. Knead the Dough: Knead the dough for 8 to 10 minutes on a floured surface or in a stand mixer with a dough hook until it is smooth and elastic.
  5. First Rise: Place the kneaded dough in a lightly greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for 1 1/2 to 2 hours or until doubled in size.
  6. Shape Rolls: Punch down the risen dough to release air. Divide the dough into 12 equal pieces. Shape each piece into a smooth round roll.
  7. Second Rise: Arrange the rolls evenly in a greased 9×13-inch baking dish. Cover and let them rise for another 45 minutes until puffy.
  8. Preheat Oven: Preheat your oven to 350°F (175°C).
  9. Bake: Bake the rolls for 20 to 25 minutes or until golden brown on top.
  10. Prepare Honey Sage Butter: While the rolls are warm, mix the melted butter with honey and chopped fresh sage.
  11. Brush and Finish: Generously brush the warm rolls with the honey sage butter mixture. Sprinkle lightly with flaky sea salt before serving.

Notes

  • Serve the rolls warm for the best flavor and texture.
  • If fresh sage is not available, rosemary or thyme can be used as a flavorful substitute.
  • Leftover rolls can be reheated briefly in the oven or microwave to restore softness.
