Instructions

  1. Preheat the skillet: Preheat a large skillet or griddle over medium heat to ensure even cooking and a perfectly crisp outside for the quesadizzas.
  2. Assemble the quesadizza: Lay one flour tortilla flat on a clean surface. Spread 2–3 tablespoons of pizza sauce over one half of the tortilla. Add a layer of shredded mozzarella cheese followed by your choice of toppings such as pepperoni, black olives, and diced bell peppers. Sprinkle with Italian seasoning for added flavor.
  3. Fold the tortilla: Carefully fold the tortilla in half, covering the toppings to form a half-moon shape quesadizza. Lightly brush the outside of the folded tortilla with olive oil to promote browning and crispiness when cooked.
  4. Cook the quesadizza: Place the quesadizza in the preheated skillet. Cook for 2–3 minutes on one side, or until golden brown and crisp. Flip carefully and cook the other side for another 2–3 minutes until the cheese inside has melted and the tortilla is crispy on both sides.
