Instructions
- Preheat the Oven: Preheat your oven to 375ºF (190ºC) and line a cookie sheet with parchment paper to prevent sticking.
- Prepare the Dough: Using an electric mixer on medium speed, beat together the softened butter and peanut butter for about 30 seconds until creamy. Gradually add ½ cup of the flour, both sugars, the egg, baking soda, baking powder, and vanilla extract, and beat until thoroughly combined. Then, mix in the remaining flour until the dough comes together.
- Shape and Coat Cookies: Form the dough into 1-inch balls using a small scoop or your hands. Roll each ball in granulated sugar to coat completely. Place the sugar-coated dough balls about 2 inches apart on the prepared cookie sheet to allow spreading.
- Bake the Cookies: Bake in the preheated oven for 7 to 9 minutes until the edges are set and just beginning to turn golden. Remove from the oven.
- Add Chocolate Kisses: Immediately after baking, press one unwrapped chocolate kiss into the center of each warm cookie. This helps the chocolate soften and adhere to the cookie.
- Cool and Set: Transfer cookies to a wire cooling rack and refrigerate them for 15 to 20 minutes. This chilling step allows the chocolate to firm up and the cookies to fully set for the best texture.
