Ingredients
Scale
Pasta
- 8 ounces elbow macaroni or pasta of choice
Sauce and Chicken
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1½ cups cooked chicken, shredded or chopped
- 1 cup shredded mozzarella cheese
- 1½ cups freshly grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- Chopped parsley for garnish (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain well and set aside.
- Make the roux and garlic base: In a large saucepan over medium heat, melt the butter. Add minced garlic and sauté for 30 to 60 seconds until fragrant, taking care not to brown it. Whisk in the flour and cook, stirring constantly, for about 1 minute to form a smooth roux.
- Prepare the cheese sauce: Slowly pour in the whole milk and heavy cream while whisking constantly. Continue stirring until the mixture is smooth and thickens, about 4 to 5 minutes.
- Add cheeses and seasoning: Reduce heat to low. Stir in shredded mozzarella, grated Parmesan, salt, black pepper, and garlic powder. Stir continuously until all the cheese melts and you have a creamy sauce.
- Combine pasta and chicken: Add the drained pasta and cooked shredded chicken to the cheese sauce. Stir well to combine and cook for an additional 1 to 2 minutes until heated through.
- Serve: Dish out the mac and cheese while warm. Garnish with chopped parsley if desired for a fresh touch.
Notes
- To make a baked version, transfer the prepared mac and cheese to a greased baking dish, top with extra cheese or breadcrumbs, and bake at 375°F (190°C) for 15-20 minutes until bubbly and golden.
- Use rotisserie chicken for quick and easy preparation.
- For a lower fat option, substitute half-and-half for the heavy cream or use reduced-fat cheeses.
