Description

This Melt in Your Mouth Toffee Recipe delivers a rich, buttery treat coated with semi-sweet chocolate and crunchy pecans. The toffee is cooked to the perfect soft-crack stage, creating a smooth, caramelized base that melts delicately in your mouth. Easy to make and irresistibly delicious, this classic dessert is perfect for sharing or gifting.

Ingredients

Scale

Toffee Base

  • 1 cup salted butter
  • 1 cup granulated sugar
  • 1/4 cup water

Toppings

  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup pecans, chopped

Instructions

  1. Prepare Pan and Equipment: Spray a 10 x 15 inch baking sheet with non-stick baking spray. Also, spray the inside of a heavy pot with non-stick spray to prevent the toffee from sticking during cooking.
  2. Add Toppings to Pan: Evenly sprinkle the chocolate chips and chopped pecans across the baking pan, creating a smooth, even layer to receive the hot toffee.
  3. Combine Toffee Ingredients: Place the salted butter, granulated sugar, and water in the prepared heavy pot, mixing them together until well combined.
  4. Cook the Toffee: Heat the mixture over medium heat, cover the pot with a lid, and let it boil for about 2 minutes. This initial boil helps the sugar dissolve fully and prevents crystallization.
  5. Boil and Stir: Remove the lid and gently stir the mixture. Return it to a vigorous boil, stirring occasionally, and continue cooking until the mixture thickens and achieves a deep caramel color. Check with a candy thermometer to confirm it has reached 275°F, the soft-crack stage.
  6. Spread Toffee Over Toppings: Remove the pot from heat immediately. Pour the hot toffee evenly over the prepared chocolate chips and pecans. Use a spatula to spread and cover the toppings completely.
  7. Cool and Break Into Pieces: Allow the toffee to cool at room temperature until fully hardened. Once cooled, break it into pieces of your desired size using your hands.
  8. Store Properly: Keep any leftover toffee in an airtight container stored in a dry place to maintain freshness and crisp texture.

Notes

  • Use a candy thermometer to ensure accuracy in reaching the soft-crack stage for perfect texture.
  • If you don’t have salted butter, use unsalted and add a pinch of salt to the mixture.
  • Make sure the pot is heavy-bottomed to prevent burning during the cooking process.
  • Allow the toffee to cool completely before breaking to avoid sticky or melted pieces.
  • To customize, substitute pecans with walnuts or almonds if preferred.
  • Store in a cool, dry place away from moisture to preserve crispness for up to 2 weeks.
