Ingredients
Scale
Chicken and Seasoning
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
Sauce
- 1 cup peach preserves or jam
- 1 fresh jalapeño, thinly sliced
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon soy sauce
- 1/4 teaspoon red pepper flakes (optional)
Garnish (optional)
- Fresh peach slices
- Chopped cilantro
Instructions
- Season the chicken: Sprinkle salt, pepper, and garlic powder evenly over both sides of the chicken breasts to ensure full flavor penetration.
- Sear the chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add chicken breasts and cook for 4–5 minutes on each side until the exterior is golden brown and the chicken is cooked through. Remove from skillet and keep warm.
- Prepare the sauce: Lower the heat to medium and add the peach preserves, sliced jalapeño, Dijon mustard, apple cider vinegar, soy sauce, and red pepper flakes to the same skillet. Stir thoroughly until the mixture is smooth and begin to simmer gently for 2–3 minutes to meld flavors.
- Combine chicken with sauce: Return the seared chicken breasts to the skillet, spooning the peach-jalapeño sauce over the top. Continue to simmer for an additional 2–3 minutes until the chicken is fully coated and heated through.
- Serve and garnish: Plate the chicken, spoon extra sauce over it, and garnish with fresh peach slices and chopped cilantro if desired. Serve hot, ideally paired with rice, quinoa, or roasted vegetables.
Notes
- Adjust the heat level by using more or fewer jalapeño slices and removing the seeds for a milder dish.
- This recipe pairs excellently with simple sides like steamed rice, quinoa, or roasted seasonal vegetables.
- To make this dish gluten-free, ensure soy sauce used is gluten-free.
