Ingredients
Scale
Chicken and Seasoning
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
Sauce
- 1 cup barbecue sauce
- 2 tablespoons honey
Serving
- 3 cups cooked white or brown rice
- ½ cup shredded cheddar cheese (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Prepare the skillet and chicken. Heat olive oil in a large skillet over medium heat. Season the bite-sized chicken pieces with salt, black pepper, and garlic powder to ensure even flavor.
- Cook the chicken. Add the seasoned chicken to the heated skillet. Cook for 6 to 8 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through inside.
- Make the honey BBQ sauce. In a small bowl, mix together the barbecue sauce and honey until well combined.
- Coat the chicken with sauce and simmer. Pour the honey BBQ mixture over the cooked chicken in the skillet. Stir to evenly coat all the chicken pieces, then let it simmer for 3 to 4 minutes until the sauce thickens slightly and clings to the chicken.
- Serve the dish. Spoon the honey BBQ chicken over warm cooked rice. Top with shredded cheddar cheese and sliced green onions, if desired, for extra flavor and color.
Notes
- Use your favorite BBQ sauce for a customizable flavor profile, whether smoky, spicy, or sweet.
- This recipe works well with grilled chicken or leftover cooked chicken for an easy shortcut.
- Add steamed vegetables such as corn, broccoli, or bell peppers to make the meal more complete and nutritious.
