Description

  • 1 lb ground beef
  • 1 medium sweet potato, peeled and diced
  • 1 small zucchini, diced
  • 1/2 red bell pepper, chopped
  • 1/2 small onion, chopped
  • 2 garlic cloves, minced

  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano

Instructions

  1. Cook Sweet Potatoes: Heat olive oil in a large skillet over medium heat. Add the diced sweet potato and cook for 5–7 minutes, stirring occasionally, until just tender.
  2. Brown the Beef: Push sweet potatoes to one side of the skillet and add the ground beef and chopped onion to the empty side. Cook until the beef is browned and cooked through, breaking it up with a spoon, about 5–6 minutes.
  3. Add Vegetables and Season: Stir in the diced zucchini, chopped bell pepper, and minced garlic. Season with smoked paprika, dried oregano, salt, and black pepper. Continue cooking for another 5–7 minutes, stirring occasionally, until the vegetables are soft and the flavors meld.
  4. Melt Cheese (Optional): If using cheese, sprinkle it evenly over the top. Cover the skillet and cook for 1–2 minutes until the cheese is melted.
  5. Garnish and Serve: Remove from heat, garnish with fresh parsley if desired, and serve warm.
