Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef
- 1 medium sweet potato, peeled and diced
- 1 small zucchini, diced
- 1/2 red bell pepper, chopped
- 1/2 small onion, chopped
- 2 garlic cloves, minced
Seasonings and Oils
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Toppings
- 1/4 cup shredded cheddar or mozzarella cheese
- Fresh parsley for garnish
Instructions
- Cook Sweet Potatoes: Heat olive oil in a large skillet over medium heat. Add the diced sweet potato and cook for 5–7 minutes, stirring occasionally, until just tender.
- Brown the Beef: Push sweet potatoes to one side of the skillet and add the ground beef and chopped onion to the empty side. Cook until the beef is browned and cooked through, breaking it up with a spoon, about 5–6 minutes.
- Add Vegetables and Season: Stir in the diced zucchini, chopped bell pepper, and minced garlic. Season with smoked paprika, dried oregano, salt, and black pepper. Continue cooking for another 5–7 minutes, stirring occasionally, until the vegetables are soft and the flavors meld.
- Melt Cheese (Optional): If using cheese, sprinkle it evenly over the top. Cover the skillet and cook for 1–2 minutes until the cheese is melted.
- Garnish and Serve: Remove from heat, garnish with fresh parsley if desired, and serve warm.
Notes
- Swap ground beef for ground turkey or chicken for a lighter version.
- Add red pepper flakes for a spicy kick.
- Top with a fried egg for a complete meal.
