Seasoned Ground Beef
- 1 pound lean ground beef
- 1 teaspoon 7 spice
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
Fresh Toppings
- 1 cup cottage cheese
- 1 cup diced cucumber
- 1 cup chopped tomatoes
- ½ cup sliced radishes
- ¼ cup sliced red onions
- ¼ cup feta cheese crumbles
- ¼ cup olives (Kalamata or green)
Finishing Touches
- Hot honey (for drizzling)
- Hummus (for dolloping)
Instructions
- Prepare and Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the peeled and diced sweet potatoes with olive oil, smoked paprika, sea salt, and black pepper until evenly coated. Spread them out in a single layer on a baking sheet and roast for 25–30 minutes, flipping halfway through, until the potatoes are golden brown and tender.
- Cook the Ground Beef: While the sweet potatoes roast, heat a large skillet over medium heat. Add the lean ground beef and break it up with a spatula as it cooks. Once the beef begins to brown, season with 7 spice, sea salt, and black pepper. Continue cooking, stirring occasionally, until the beef is fully cooked through and fragrant.
- Prepare Fresh Toppings: While the beef cooks, dice the cucumbers, chop the tomatoes, slice the radishes and red onions. Also prepare the olives and crumble the feta cheese, setting all toppings aside for assembly.
- Assemble the Bowls: Begin each bowl with a generous base of the roasted sweet potatoes. Spoon the seasoned ground beef over the potatoes, then thoughtfully arrange the fresh toppings on top: cottage cheese, diced cucumber, chopped tomatoes, sliced radishes, crumbled feta, sliced red onion, and olives.
- Finish and Serve: Add a dollop of hummus to each bowl and drizzle with hot honey if desired for a perfect sweet and spicy finish. Serve immediately and enjoy this nourishing, balanced meal.
Notes
- You can substitute 7 spice with your favorite spice blend like taco seasoning or za’atar for different flavor profiles.
- For a vegetarian version, replace ground beef with cooked lentils or plant-based crumbles.
- Adjust the amount of hot honey drizzle to taste, or leave it out for a milder bowl.
- Sweet potatoes can be roasted up to a day in advance to save time.
- Use low-fat or full-fat cottage cheese based on dietary preferences.
