For the Tzatziki Sauce

  • ½ cup Greek yogurt
  • ¼ cup cucumber, finely grated and drained
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Salt, to taste

For Serving

  • 4 whole wheat or brioche burger buns, toasted
  • 1 cup arugula or baby spinach
  • 1 tomato, sliced
  • ¼ red onion, thinly sliced
  • Optional: crumbled feta cheese


Instructions

  1. Prepare Tzatziki Sauce: In a bowl, combine Greek yogurt, grated and drained cucumber, olive oil, lemon juice, minced garlic, chopped fresh dill, and salt to taste. Mix thoroughly and refrigerate to allow flavors to meld.
  2. Make Turkey Patties: In a large bowl, gently combine ground turkey with finely chopped red onion, parsley, dill, minced garlic, dried oregano, ground cumin, salt, and pepper. Form the mixture into four equal-sized patties, being careful not to overwork the meat.
  3. Cook Patties: Heat olive oil in a skillet over medium heat. Cook the turkey patties for 4 to 5 minutes on each side until they reach an internal temperature of 165°F (74°C), ensuring they are fully cooked and juicy.
  4. Toast Buns: Lightly toast the burger buns either in the skillet or in the oven until golden brown to enhance texture and flavor.
  5. Assemble Burgers: Spread a generous amount of the prepared tzatziki sauce on both the top and bottom halves of each bun.
