Ingredients
Scale
Filling
- 2 cups cooked chicken (shredded or chopped)
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup chopped kalamata olives
- 1/4 cup chopped sun-dried tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 3 cups fresh spinach, chopped
Crust and Topping
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat and Prepare Skillet: Preheat your oven to 400°F (200°C). Heat olive oil in an oven-safe skillet over medium heat, ensuring the skillet you use can go from stovetop to oven safely.
- Sauté Onion and Garlic: Add the chopped onion to the skillet and cook for 3 to 4 minutes until the onion softens. Stir in minced garlic and cook for an additional 1 minute to release its aroma without burning.
- Cook Spinach and Combine Filling: Add the chopped spinach to the skillet and cook until it wilts. Then stir in the cooked chicken, crumbled feta, ricotta cheese, chopped kalamata olives, sun-dried tomatoes, dried oregano, and black pepper. Mix everything well and heat through. Remove the skillet from heat.
- Assemble the Pie: Unroll the thawed puff pastry sheet and carefully place it over the skillet filling, tucking the edges neatly around the filling inside the skillet.
- Apply Egg Wash and Vent Pie: Brush the top of the puff pastry with the beaten egg to give it a golden finish when baked. Cut a few small slits in the top of the pastry to allow steam to escape during baking.
- Bake: Place the skillet in the preheated oven and bake for 20 to 25 minutes, until the puff pastry is golden brown and puffed up.
- Cool and Serve: Remove the skillet from the oven and let the pie cool for about 5 minutes before slicing and serving to allow the filling to set slightly.
Notes
- Ensure your skillet is oven-safe to avoid damage or accidents.
- Puff pastry can be substituted with pie dough if preferred for a different texture.
- For an added fresh flavor, consider adding a bit of lemon zest to the filling mixture before assembling.
