  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt

Garlic Butter and Sauce

  • 5 tablespoons butter, divided
  • 10 cloves garlic, minced and divided
  • 1.5 cups heavy cream
  • 2 green onions, diced (green and white parts)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2/3 cup parmesan cheese, grated/shredded/shaved

Mash and Additions for Potatoes

  • 4 lbs russet potatoes
  • 1 cup half and half, warmed
  • 6 tablespoons salted butter, melted
  • 3/4 cup monterey jack cheese, shredded (or mozzarella, pepper jack, etc.)
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • About 1/2 teaspoon pepper to taste


Instructions

  1. Prep the Ingredients: Cut the steak into 2-3 inch pieces. Rub evenly with avocado oil and season well on all sides with the blackened seasoning mix (paprika, cayenne, onion powder, garlic powder, black pepper, salt, thyme, and oregano). Let the steak rest at room temperature for 10-15 minutes to remove chill from the fridge. Meanwhile, peel and quarter the potatoes and soak them in cold water for 10 minutes to remove excess starch.
  2. Boil Potatoes: Drain the soaked potatoes, then place them in a pot of salted water. Bring to a boil and cook until fork tender, about 15-20 minutes, while you prep and cook the steak.
  3. Cook Steak: Heat 2-3 tablespoons avocado oil in a large skillet over medium-high heat. Add steak pieces without crowding the pan (cook in batches if needed). Let cook undisturbed for about 2 minutes to develop a golden crust, then flip once. Cook 1 more minute on the other side, reduce heat to low, and cook an additional 1 minute. Remove steak and transfer to a bowl.
  4. Make Garlic Butter and Toss Steak: In the same skillet, add 3 tablespoons butter and 1 tablespoon minced garlic. Sauté garlic in butter until fragrant, about 30 seconds. Return steak to the pan and toss to coat thoroughly in the garlic butter. Cook for another minute to meld the flavors. Remove steak to a bowl and tent with foil to keep warm and moist.
  5. Prepare Parmesan Cream Sauce: Using the same pan with residual garlic butter, add the remaining 2 tablespoons butter and the rest of the minced garlic. Sauté until garlic is fragrant, then slowly whisk in the heavy cream. Bring to a simmer and reduce for 3-5 minutes until slightly thickened.
  6. Mash Potatoes: Drain the boiled potatoes thoroughly. Add melted butter, warmed half and half, and mash until smooth and creamy without chunks. Stir in shredded cheese, garlic powder, salt, and pepper. Mix well and keep warm.
  7. Finish Sauce and Serve: To the reduced cream sauce, add red pepper flakes and diced green onions, then stir in parmesan cheese.
