Ingredients
Scale
Brownie Batter
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 2 tablespoons lemon zest (about 2 lemons)
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
Lemon Glaze
- 1/2 cup powdered sugar
- 1–2 tablespoons lemon juice (freshly squeezed)
- 1/2 teaspoon lemon zest (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it to prevent the brownies from sticking.
- Mix Wet Ingredients: In a large bowl, whisk together the melted butter and granulated sugar until combined. Then add the eggs, lemon zest, lemon juice, and vanilla extract, mixing thoroughly to incorporate all flavors.
- Add Dry Ingredients: Stir in the all-purpose flour and salt until just combined. Be careful not to overmix, as this will affect the fudgy texture of the brownies.
- Bake the Brownies: Pour the batter into the prepared baking dish and smooth the top evenly. Bake in the preheated oven for 20–25 minutes or until the edges are set and the center is just firm to the touch.
- Cool: Remove the brownies from the oven and allow them to cool completely in the pan before adding the glaze.
- Prepare Lemon Glaze: Whisk together the powdered sugar, 1 to 2 tablespoons of fresh lemon juice, and optional lemon zest in a small bowl until smooth and pourable.
- Glaze and Chill: Drizzle the lemon glaze evenly over the cooled brownies, spreading it gently to cover the surface. Chill the brownies for 10–15 minutes to let the glaze set.
- Serve: Once the glaze is set, slice the brownies into 9 to 12 squares and serve. Store leftovers in an airtight container at room temperature or in the refrigerator.
Notes
- These brownies are soft and fudgy rather than cakey.
- For an extra punch of lemon flavor, add a few drops of lemon extract to the batter.
- Store brownies in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Be careful not to overmix the batter to maintain the fudgy texture.
- Chilling the glaze helps it set nicely without dripping.
