Description

These Fudgy Black Bean Brownie Bites are a deliciously healthy treat that combines the rich flavor of chocolate with the nutritional benefits of black beans. Perfectly portioned in mini muffin form, these brownies are moist, fudgy, and sweetened naturally with maple syrup and coconut sugar. They are easy to make and serve as a guilt-free snack or dessert.

Ingredients

Scale

Brownie Batter

  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp unsweetened cocoa powder
  • 1/2 cup rolled oats
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup or honey
  • 2 tbsp coconut sugar or regular sugar
  • 1/4 cup coconut oil, melted
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips (dark or semi-sweet)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease or line a mini muffin tin with paper liners to prevent sticking.
  2. Combine Ingredients: In a food processor, add the black beans, cocoa powder, rolled oats, salt, maple syrup, coconut sugar, melted coconut oil, vanilla extract, and baking powder.
  3. Blend Batter: Blend the mixture until completely smooth, stopping occasionally to scrape down the sides to ensure even mixing.
  4. Add Chocolate Chips and Portion Batter: Stir in the chocolate chips by hand, then spoon the batter evenly into the prepared mini muffin tin.
  5. Bake Brownie Bites: Bake for 10-12 minutes, or until the tops are set but fudgy. Allow the brownie bites to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • Drain and rinse the black beans thoroughly to avoid any canned taste.
  • You can substitute the maple syrup with honey if preferred.
  • For a vegan option, use maple syrup instead of honey.
  • Don’t overbake—the brownie bites should remain fudgy inside.
  • Store leftover brownie bites in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
