Ingredients
Scale
Main Ingredients
- 6 cups crispy rice cereal
- 1/4 cup unsalted butter
- 1 (10-ounce) bag mini marshmallows
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Optional Toppings
- 1/2 cup mini marshmallows (for topping)
- 1/4 cup peanut butter drizzle or melted peanut butter (for topping)
Instructions
- Prepare the baking dish: Grease a 9×13-inch baking dish with butter or cooking spray and set it aside to prevent sticking.
- Melt butter and marshmallows: In a large saucepan over medium heat, melt the unsalted butter. Add the mini marshmallows and stir continuously until they are completely melted and the mixture is smooth.
- Add peanut butter and vanilla: Stir in the creamy peanut butter until fully incorporated into the melted marshmallow mixture, then remove the saucepan from heat. Mix in the vanilla extract for added flavor.
- Combine with cereal: Quickly pour the marshmallow-peanut butter mixture over the crispy rice cereal held in a large mixing bowl. Stir thoroughly until all the cereal is evenly coated.
- Press mixture into baking dish: Transfer the coated cereal mixture into the prepared baking dish. Use a greased spatula or a piece of wax paper to press and smooth the top evenly.
- Add optional toppings: If desired, scatter mini marshmallows on top and lightly press them into the surface to adhere.
- Drizzle peanut butter: Drizzle with melted peanut butter over the top for an extra touch of flavor and indulgence.
- Cool and set: Let the treats cool and set at room temperature for about 30 minutes to firm up.
- Slice and serve: Once set, cut the treats into squares and serve.
Notes
- Use creamy peanut butter for a smoother mixing experience; natural peanut butter can work but may affect texture.
- Press the mixture firmly into the pan to ensure treats hold together well.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- For added crunch, consider stirring in chopped peanuts or peanut butter chips.
- Letting the treats set fully is key to clean slicing.
