  • 1 lb skinless salmon fillet, cut into bite-sized pieces
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 4 cups fish stock (or water with fish bouillon)
  • 3 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 cup heavy cream
  • 1 bay leaf
  • 1/2 tsp whole allspice (optional)
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh dill


Instructions

  1. Sauté Onion: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 3–4 minutes, releasing its sweetness and aroma.
  2. Simmer Vegetables: Pour in the fish stock and bring to a boil. Add the diced potatoes, sliced carrots, bay leaf, and whole allspice if using. Reduce the heat and simmer gently for 10–12 minutes until the vegetables are tender but not mushy.
  3. Add Salmon: Carefully add the salmon pieces to the pot and continue to simmer for 5–7 minutes until the salmon is fully cooked and flakes easily with a fork.
  4. Add Cream and Season: Stir in the heavy cream and season the soup with salt and black pepper to taste. Heat through for 2–3 minutes without boiling to maintain the cream’s smooth texture.
  5. Finish and Serve: Remove from heat and discard the bay leaf. Stir in the fresh chopped dill to infuse a fresh herbal note. Serve the soup hot with crusty rye bread or dark whole grain bread for an authentic Finnish experience.

Notes

  • For a lighter version, substitute heavy cream with whole milk.
  • Smoked salmon can be added at the end for a deeper smoky flavor.
