- Cook the Sushi Rice: In a small saucepan, combine rinsed sushi rice and water. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes. Remove from heat and let the rice sit covered for 10 more minutes to absorb moisture fully.
- Season the Rice: While the rice is resting, mix rice vinegar, sugar, and salt in a small bowl. Gently fold this mixture into the cooked rice using a rice paddle or spatula, then let the rice cool to room temperature.
- Prepare the Rolling Surface: Place a sheet of nori shiny-side down on a bamboo sushi mat or a clean kitchen towel to prevent sticking. Moisten your hands to keep the rice from sticking to them.
- Spread the Rice: Press a thin, even layer of the cooled sushi rice over the nori sheet, leaving about a 1-inch border at the top edge uncovered to seal the roll.
- Add the Fillings: Arrange avocado slices, julienned cucumber, and carrot in a horizontal line across the lower third of the rice-covered nori.
- Roll the Sushi: Using the bamboo mat, roll the sushi tightly from the bottom up, applying gentle pressure as you roll to secure the fillings inside.
- Seal the Roll: Moisten the top border of the nori with a little water and finish rolling to seal the roll firmly.
- Slice the Roll: Using a sharp knife, slice the sushi roll into 6–8 pieces. Clean the knife between cuts to ensure neat slices.
- Repeat: Repeat the process with the remaining nori sheets and ingredients.
