- 12 oz fully ripened and tender mangoes, peeled, pitted, and diced
Gelatin Mixture

- 1.5 tbsp gelatin or 1.5 tsp agar agar powder for a vegan version
- 1.5 tbsp white granulated sugar
- 0.54 cups full-fat coconut milk (or substitute with evaporated milk, heavy cream, or evaporated coconut milk)
- 4 tbsp evaporated milk or coconut milk for a vegan version
Instructions
- Ripe Mango Puree: Transfer the diced mango chunks to a blender or food processor and blend until smooth. For extra smoothness, strain the puree to remove any fibrous bits.
- Gelatin Mixture: In a small bowl, mix the cold water and gelatin until combined and let it bloom. Add sugar, coconut milk, and the mango puree into a mixing bowl and whisk together until smooth.
- Combine Ingredients: Pour the mixture into a pot and gently heat over low to medium heat, stirring frequently, until the gelatin fully dissolves. Take care not to boil the mixture as this can affect the texture.
- Pour and Chill: Pour the mixture evenly into serving bowls or molds. Refrigerate for a minimum of 6 hours or preferably overnight to allow the pudding to set properly.
- Serve: Once set, serve chilled pudding with a drizzle of evaporated milk or coconut milk on top for added creaminess and flavor.
