Description

These Crispy and Easy Zucchini Fritters are a delicious and healthy way to enjoy fresh zucchini. Made with simple ingredients including gluten-free flour and Parmesan cheese, these fritters are perfectly seasoned and pan-fried until golden and crispy. Ideal as a snack, appetizer, or side dish, they come together quickly and can be served with a variety of dipping sauces for extra flavor.

Ingredients

Scale

Main Ingredients

  • 2 medium zucchinis (about 2 cups grated)
  • 1 teaspoon salt
  • 1 large egg
  • ¼ cup gluten-free flour (for a gluten-free option)
  • 2 tablespoons grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika or chili powder (optional)
  • 2 tablespoons chopped fresh parsley or dill
  • 3 tablespoons olive oil (for frying)

Instructions

  1. Prepare Zucchini: Wash the zucchinis and cut off the ends. Grate them using a box grater or food processor, then place in a colander to drain.
  2. Draw Out Moisture: Sprinkle 1 teaspoon of salt evenly over the grated zucchini and let it sit for 10–15 minutes to draw out excess moisture.
  3. Remove Liquid: Firmly squeeze the zucchini using your hands or a clean kitchen towel to remove as much liquid as possible. This step is crucial for crispy fritters.
  4. Make Batter: In a mixing bowl, whisk together 1 large egg, ¼ cup gluten-free flour, 2 tablespoons grated Parmesan cheese (if using), minced garlic, black pepper, and paprika until smooth. Add the squeezed zucchini and chopped parsley, then stir until well combined.
  5. Form Patties: Scoop about 2 tablespoons of the batter at a time and shape into small patties of even thickness. Place each patty on a plate, ready for frying.
  6. Fry Fritters: Heat 3 tablespoons of olive oil in a skillet over medium heat. Add the patties and cook for 3–4 minutes on each side until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.
  7. Serve: Serve the zucchini fritters warm with your favorite dipping sauce such as sour cream or tzatziki, and garnish with extra chopped parsley if desired.

Notes

  • Be sure to squeeze out as much liquid from the zucchini as possible for the best crispiness.
  • If you prefer, you can substitute fresh herbs like dill for parsley.
  • For a vegan version, replace the egg with a flax egg and use a vegan cheese alternative or omit the cheese.
  • These fritters reheat well in a skillet or air fryer to maintain crispiness.
  • To make the fritters spicier, increase the paprika or add a pinch of cayenne pepper.
