- Prepare Oven and Baking Sheet: Preheat your oven to 425ºF (218ºC) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix Dry Ingredients and Cut in Butter: In a large mixing bowl, whisk together all-purpose flour, baking powder, salt, and baking soda until evenly combined. Add the grated unsalted butter and use a pastry cutter or fork to cut the butter into the dry ingredients, creating a crumbly texture.
- Add Cottage Cheese and Milk: Stir in the cottage cheese and whole milk using a fork until a soft dough forms. Be careful not to overmix to keep the biscuits light and tender.
- Shape the Dough: Transfer the dough onto a lightly floured surface and sprinkle a little flour on top. Gently pat or roll the dough out to about ½ to ¾ inch thickness for perfectly sized biscuits.
- Cut and Arrange Biscuits: Using a 3-inch biscuit cutter, cut out biscuits and place them on the prepared baking sheet. Gather the remaining dough scraps, gently press them together, pat out again, and cut more biscuits until you have a total of 10 biscuits. Place them close together on the pan to help them rise evenly.
