Ingredients
Scale
Banana Bites
- 2 medium bananas, sliced into bite-sized rounds
Chocolate Coating
- 1 cup dark chocolate chips
- 2 tbsp coconut oil
Instructions
- Prepare Banana Slices: Slice the bananas into bite-sized rounds and arrange them evenly on a cookie sheet lined with parchment paper. Place the sheet in the freezer and freeze the banana slices for 1 hour until firm.
- Prepare the Chocolate Coating: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat the mixture in 30-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth. Allow the chocolate to cool slightly to avoid melting the frozen bananas when dipped.
- Dip the Banana Slices: Remove the banana slices from the freezer. Using a fork, dip each frozen banana slice into the melted chocolate, making sure it is fully coated. Lift the slice with the fork and let any excess chocolate drip off.
- Freeze Again: Place the chocolate-covered banana slices back on the parchment-lined cookie sheet and return them to the freezer for several minutes to allow the chocolate coating to set and harden.
- Serve: Enjoy the chocolate covered banana bites while still frozen for a refreshing treat or let them soften slightly in the refrigerator before serving. Avoid fully defrosting to maintain the best texture.
Notes
- Use dark chocolate with at least 60% cacao for a richer, less sweet flavor.
- Ensure banana slices are fully frozen before dipping to prevent melting the chocolate.
- You can substitute coconut oil with other neutral oils like vegetable or canola oil if preferred.
- Store leftover banana bites in an airtight container in the freezer for up to 1 week.
- Optionally, sprinkle chopped nuts or shredded coconut on the chocolate before it sets for added texture.
