Instructions

  1. Marinate Chicken: In a bowl, toss the thinly sliced chicken with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Let it marinate for 10 to 15 minutes while preparing the sauce and vegetables to allow flavors to penetrate and help tenderize the chicken.
  2. Prepare Sauce: In a small bowl, combine the soy sauce, hoisin sauce, honey, rice vinegar, and cornstarch slurry. Whisk well until smooth and set aside for later use.
  3. Cook Chicken: Heat vegetable oil and sesame oil together in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 4 to 5 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the pan and set aside to prevent overcooking.
  4. Stir-Fry Vegetables: In the same pan, add the sliced red bell pepper and red onion. Stir-fry for 2 to 3 minutes until vegetables are slightly tender but still crisp. Add minced garlic and grated ginger and cook for an additional 30 seconds until fragrant, releasing their essential oils.
  5. Combine and Finish: Return the cooked chicken to the pan, add the diced mango, and pour in the prepared sauce. Stir everything together to coat evenly and cook for 1 to 2 minutes until the sauce thickens slightly and clings to the ingredients.
