Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook Chicken: Heat olive oil in a large skillet over medium heat. Add the bite-sized chicken pieces and cook, stirring occasionally, until they turn golden brown and are cooked through, about 5-7 minutes.
  3. Sauté Vegetables: Add the sliced red and green bell peppers along with the onion to the skillet. Cook everything together for about 5 minutes, stirring frequently, until the vegetables begin to soften but still retain some crunch.
  4. Add Seasoning and Combine: Sprinkle the fajita seasoning evenly over the chicken and vegetable mixture. Stir well to coat everything with the seasoning. Then add the drained diced tomatoes and the cooked brown rice. Season with salt and pepper to taste, mixing thoroughly to combine all ingredients.
  5. Transfer to Baking Dish: Lightly grease a 9×13-inch baking dish. Transfer the chicken fajita mixture into the dish, spreading it evenly.
