Description

This Chicken Avocado Melt Sandwich combines juicy, pan-seared chicken breasts with creamy avocado, melted cheese, and fresh vegetables, all grilled between perfectly toasted bread slices for a satisfying and flavorful meal that’s perfect for lunch or a quick dinner.

Ingredients

Scale

Chicken and Seasoning

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Ingredients

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked and no longer pink inside. Remove and let rest a few minutes, then slice thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set both aside for assembling.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly.
  4. Assemble the Sandwiches: On two slices of bread, layer sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Place the remaining bread slices on top, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the assembled sandwiches in the pan and grill for 3-4 minutes per side until bread is golden and cheese melts, pressing gently with a spatula to help melt the cheese evenly.
  6. Serve: Remove sandwiches from the skillet, let cool for a minute, slice in half, and serve warm.

Notes

  • Use your favorite cheese such as Swiss, cheddar, or provolone for different flavor profiles.
  • Choose bread types like sourdough or ciabatta for the best texture and taste.
  • Feel free to swap mayonnaise for a lighter spread or add hot sauce for a kick.
  • Make sure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
  • Pressing the sandwich gently while grilling helps the cheese to melt and the sandwich to crisp up uniformly.
