Description

Cheesy Mashed Potato Puffs are bite-sized, savory treats made from creamy mashed potatoes mixed with eggs, cheese, and fresh chives, then baked until golden and crispy on top. Perfect as a party appetizer or a comforting side dish, these flavorful puffs are easy to prepare and delicious served warm with a dollop of sour cream.

Ingredients

Scale

Potato Mixture

  • 2 cups mashed potatoes (leftover works great)
  • 2 large eggs
  • 3/4 cup shredded cheese (Monterey Jack or cheddar)
  • 2 tablespoons chopped fresh chives
  • Salt, to taste
  • Black pepper, to taste

Topping

  • 1/4 cup shredded cheese (Monterey Jack or cheddar)

For Serving

  • Sour cream (optional)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C) and grease a mini muffin tin to prevent sticking.
  2. Mix Ingredients: In a mixing bowl, combine the mashed potatoes, eggs, 3/4 cup of shredded cheese, and chopped fresh chives. Season with salt and black pepper to your taste, mixing thoroughly until well blended.
  3. Fill Muffin Cups: Spoon the potato mixture evenly into the prepared mini muffin cups, filling each nearly to the top for perfect portion sizes.
  4. Add Cheese Topping: Sprinkle the remaining 1/4 cup of shredded cheese over the tops of each filled muffin cup to create a delicious cheesy crust when baked.
  5. Bake: Place the muffin tin in the oven and bake for 15–20 minutes, or until the puffs are golden brown on top and set.
  6. Cool and Serve: Allow the puffs to cool slightly before removing them from the tin. Serve warm, optionally with sour cream on the side for dipping.

Notes

  • Leftover mashed potatoes work best for this recipe, ensuring the mixture is not too runny.
  • You can substitute the cheese with your favorite variety such as mozzarella or gouda.
  • For a crispier bottom, try using a silicone muffin pan or line with mini cupcake liners.
  • These puffs can be prepared in advance and reheated in the oven for a few minutes before serving.
  • Adding finely chopped cooked bacon or ham can add extra flavor if desired.
