Biscuit Dough
- 4 eggs
- 4 Tbsp baking powder
- 1â…“ cups almond flour

- Cooking spray (for skillet)
Instructions
- Preheat Oven and Prepare Skillet: Preheat your oven to 400ºF. Lightly spray a 12-inch cast iron skillet with cooking spray and set it aside. This will be used to bake the biscuits evenly.
- Melt Cheeses: Place the cream cheese and shredded mozzarella cheese in a saucepan over low heat. Stir continuously until both cheeses melt and blend into a smooth mixture. Remove from heat once fully incorporated.
- Mix Biscuit Dough: In a large bowl, combine the melted cheese mixture with the eggs, baking powder, and almond flour. Stir until you achieve a smooth dough. Allow the dough to rest for 10 to 20 minutes to help it set and thicken slightly.
- Scoop Dough into Skillet: Using a large cookie scoop, portion the dough into the prepared 12-inch cast iron skillet, spacing the biscuits appropriately. Once all scooped, place the skillet in the refrigerator for 10 minutes to chill the dough and help maintain shape during baking.
- Bake Biscuits: Remove the skillet from the refrigerator and bake in the preheated oven for 20 to 25 minutes. Bake until the biscuits turn a golden brown color, indicating they are cooked through and have a nice crust.
- Brush with Butter: After removing the biscuits from the oven, immediately brush the tops with melted butter for added flavor and a beautiful glossy finish. Serve warm and enjoy!
