Ingredients
Scale
For the French Toast
- 4 slices thick-cut bread (brioche or challah)
- 3 large eggs
- 1/2 cup milk
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons butter (divided)
For the Caramelized Bananas
- 2 ripe bananas (sliced)
- 2 tablespoons brown sugar
To Serve (optional)
- Maple syrup
- Powdered sugar
Instructions
- Prepare the egg mixture: In a shallow bowl, whisk together the eggs, milk, ground cinnamon, vanilla extract, and a pinch of salt until well combined.
- Soak the bread: Dip each thick-cut bread slice into the egg mixture, making sure to coat both sides thoroughly to absorb the flavors.
- Cook the French toast: Heat 1 tablespoon of butter in a large nonstick skillet or griddle over medium heat. Place the soaked bread slices in the skillet and cook for 2–3 minutes on each side, or until they develop a golden-brown crust and are cooked through. Remove and keep warm.
- Caramelize the bananas: In the same skillet, melt the remaining tablespoon of butter. Stir in the brown sugar until it dissolves and becomes syrupy. Add the sliced bananas and cook gently for 2–3 minutes, stirring occasionally, until the bananas soften and become caramelized.
- Assemble and serve: Spoon the warm caramelized bananas evenly over the French toast slices. Optionally, drizzle with maple syrup and dust with powdered sugar for extra sweetness and presentation. Serve immediately while warm.
Notes
- Use day-old bread for best texture and to prevent sogginess.
- Add a splash of rum or banana liqueur to the caramelized bananas for a boozy twist.
- To make this recipe dairy-free, substitute with plant-based milk and vegan butter.
- For extra flavor, sprinkle some chopped nuts like pecans or walnuts over the bananas.
