Instructions
- Prepare the fruit: Thread the strawberries, grapes, pineapple chunks, and watermelon cubes onto wooden skewers in your desired order, making sure they are securely placed. Set the completed skewers aside on a parchment-lined tray.
- Make the candy syrup: In a small saucepan, combine the granulated sugar, light corn syrup, and water. Place over medium heat and bring the mixture to a boil, stirring initially just to dissolve sugar but then avoid stirring to prevent crystallization.
- Boil to hard crack stage: Allow the mixture to boil until it reaches 300°F, which is the hard crack stage for candy making, typically about 10–12 minutes. Use a candy thermometer to ensure accuracy.
- Flavor and coat: Remove the saucepan from heat and stir in vanilla extract if using. Immediately working quickly to prevent the syrup from hardening, dip or spoon the hot candy coating evenly over the fruit skewers to create a shiny, crunchy shell.
- Cool and harden: Place the coated skewers back on the parchment paper and let them cool completely at room temperature until the candy shell hardens and becomes crisp, about 15–20 minutes.
