- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prepare Potatoes and Onion: Place grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible to ensure crisp latkes.
- Make Latke Batter: In a large bowl, combine the squeezed potatoes and onion with eggs, flour, salt, black pepper, and garlic powder. Mix until well incorporated.
- Heat Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering but not smoking.
- Fry Latkes: Scoop about 2 tablespoons of the batter per latke into the hot oil, gently flattening each to form a pancake shape. Fry for 3–4 minutes on each side until golden brown and crispy, then remove and drain on paper towels.
- Coat with Buffalo Sauce: While still warm, lightly brush each latke with buffalo wing sauce or toss them gently in a bowl to coat evenly.
- Make Blue Cheese Dip: In a separate bowl, combine sour cream, mayonnaise, crumbled blue cheese, lemon juice, garlic powder, salt, and pepper. Mix until smooth and creamy. Chill until serving.
- Serve: Serve the buffalo-coated latkes warm alongside the chilled blue cheese dip for dipping.
