Instructions

  1. Prepare Potatoes and Onion: Place grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible to ensure crisp latkes.
  2. Make Latke Batter: In a large bowl, combine the squeezed potatoes and onion with eggs, flour, salt, black pepper, and garlic powder. Mix until well incorporated.
  3. Heat Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering but not smoking.
  4. Fry Latkes: Scoop about 2 tablespoons of the batter per latke into the hot oil, gently flattening each to form a pancake shape. Fry for 3–4 minutes on each side until golden brown and crispy, then remove and drain on paper towels.
