- Make the Blackberry Balsamic Jam: In a saucepan over medium heat, combine 2 cups of blackberries, 3 tablespoons balsamic vinegar, 6 tablespoons sugar, 2 tablespoons lemon juice, and a pinch of kosher salt. Simmer gently, stirring occasionally, until the mixture thickens to a jam-like consistency, about 10-15 minutes. Remove from heat and set aside to cool slightly.
- Prepare the Grilled Cheese Sandwich: Slice 300 grams of double cream brie cheese into thin pieces. Heat a large skillet over medium heat and melt a small amount of butter. Butter one side of each sourdough bread slice. Place four slices, buttered side down, in the skillet. Layer the brie slices and sprinkle chopped fresh thyme evenly over the cheese. Continue by spreading a generous amount of the blackberry balsamic jam on the unbuttered sides of the remaining four bread slices and place them on top, jam side down, to form sandwiches.
