Instructions

  1. Marinate the Chicken: In a bowl, combine chicken cubes, BBQ sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure all pieces are evenly coated with the marinade.
  2. Thread the Chicken: Thread the marinated chicken pieces onto wooden or metal skewers, making sure to distribute the pieces evenly on each skewer.
  3. Preheat the Grill: Preheat your grill or grill pan over medium-high heat to achieve a nice sear and grill marks on the chicken.
  4. Grill the Skewers: Place the skewers on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through, reaches an internal temperature of 165°F, and has a slightly charred exterior.
  5. Prepare the Salad: While the chicken cooks, arrange the mixed greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, corn kernels, and cheese (if using) in a large bowl or on individual plates.
