Instructions
- Prepare the crust: In a small bowl, combine the graham cracker crumbs with melted butter, mixing thoroughly until the crumbs are evenly coated. Set this mixture aside to use as the base layer of the parfait.
- Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese together with granulated sugar and vanilla extract until the mixture is smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture to achieve a fluffy and light texture.
- Prepare the banana slices: In another bowl, toss the banana slices with lemon juice to prevent them from browning and to maintain their fresh appearance and flavor.
