Salad Ingredients
- 6 cups mixed greens (such as spinach, arugula, and romaine)
- 1/2 cup dried cranberries
- 1/3 cup crumbled goat cheese or feta
- 1/3 cup chopped candied pecans or walnuts
- 1/4 small red onion, thinly sliced
Balsamic Dressing
- 1/4 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1/3 cup olive oil
- Salt and black pepper to taste
Instructions
- Combine salad ingredients: In a large bowl, add the mixed greens, dried cranberries, crumbled goat cheese, chopped candied nuts, and thinly sliced red onion. Toss gently to mix the ingredients evenly.
- Prepare the dressing: In a separate small bowl or jar, whisk together the balsamic vinegar, Dijon mustard, and honey or maple syrup until well blended. Gradually drizzle in the olive oil while continuously whisking to emulsify the dressing. Season with salt and freshly ground black pepper to taste.
- Toss and serve: Pour the dressing over the salad just before serving. Toss the salad gently to coat the ingredients evenly with the dressing. Serve immediately to maintain freshness and crispness.
Notes
- Add grilled chicken or roasted sweet potatoes to make the salad more filling and hearty.
- Swap goat cheese for blue cheese for a different flavor profile.
- You can use fresh cranberries when they are in season for a tart and vibrant twist.
