Description

Instructions

  1. Prepare the Filling: In a skillet over medium heat, melt the butter. Add the peeled and diced apples, brown sugar, ground cinnamon, nutmeg, and lemon juice. Cook for 5 to 7 minutes, stirring occasionally, until the apples become tender. Stir in the cornstarch slurry and continue cooking for another 1 to 2 minutes until the mixture thickens. Remove from heat and let cool slightly.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the cooled apple mixture into the center of the wrapper. Fold the bottom corner over the filling, fold in the sides, then roll tightly toward the top corner. Seal the top corner with a dab of water to secure the roll. Repeat with remaining wrappers and filling.
  3. Heat the Oil: Pour vegetable oil into a deep pan to a depth of about 2 inches and heat to 350°F (175°C). Use a thermometer to maintain the correct frying temperature.
  4. Fry the Egg Rolls: Fry the egg rolls in batches, cooking each side for 2 to 3 minutes, or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil, and drain on paper towels to remove excess oil.
