Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, baking soda, and salt to evenly combine all the dry components.
- Mix Wet Ingredients: In a separate bowl, blend the melted coconut oil or butter with the maple syrup or honey and vanilla extract until the mixture is smooth and uniform.
- Combine Ingredients: Pour the wet mixture into the dry ingredients and stir gently until a soft dough forms. If using, fold in the dark chocolate chips to distribute evenly.
- Scoop Dough: Using a tablespoon, scoop portions of the dough onto the prepared baking sheet. Gently flatten each scoop into a disc shape to ensure even baking.
- Bake: Place the baking sheet in the oven and bake for 10 to 12 minutes, or until the edges of the cookies turn golden and set.
- Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely. This helps the cookies firm up and maintain their shape.
