Buffalo Chicken Filling

- 12 egg roll wrappers, defrosted
- 1 egg (or 1/4 cup water mixed with 1/2 teaspoon cornstarch for egg-free option)
- Avocado or olive oil spray for spraying
Instructions
- Prepare the filling: Mix together warm shredded buffalo chicken, cream cheese, and chopped green onions in a bowl. Taste and adjust seasoning with kosher salt and pepper as needed to balance flavors.
- Preheat the air fryer: Set your air fryer to 400°F (204°C) to preheat while you assemble the egg rolls. Whisk the egg in a small bowl or prepare the cornstarch/water mixture as an egg wash substitute.
- Assemble the egg rolls: Place each egg roll wrapper in a diamond shape on a clean cutting board. Spoon 1-2 tablespoons of buffalo chicken mixture onto the lower end of the wrapper. Roll the edge toward the top, folding in the sides like an envelope, then continue rolling until about 1 inch remains. Brush the top edge with egg wash or cornstarch mixture to seal the roll tightly.
- Prepare for air frying: Lightly spray the outside of the assembled egg rolls with avocado or olive oil spray to encourage crisping. Also spray the inner basket of the air fryer to prevent sticking.
- Cook the egg rolls: Place the egg rolls in the air fryer basket in a single layer. Air fry at 400°F for 8 minutes, then check if they are golden brown. Flip the egg rolls and continue cooking for another 5-7 minutes until they are evenly golden and crispy all over.
